How to make a christmas cake?
well first of all below are the ingredients you need for the Christmas cake:
for the fruit mixture:
- preserved chow chow fruit 325g
- preserved candid peel 325g
- fresh cherries 325g
- fried or dried cashews 625g
- raisins 875g
- black current 325g
- sultana 325g
- preserved ginger 325g
- preserved pumpkin 875g
- lemon peel 5tsp
- rose essence 5tsp
- almond essence 5tsp
- golden syrup 5tbsp
- strawberry jam 10tbsp
- brandy 10tbsp
- bee honey 10tbsp
- vanilla 5tsbsp
- fragrance powder 5tsp
And for the cake:
- semolina 625g
- egg yolk 25
- egg white 15
- vanilla 5tsp
- brown sugar 875g
- butter 625g
And the icing they use to cover the cake is marzipan icing. For that you will need below ingredients:
egg whites 1
cashew powder 80g
icing sugar 200g
rose essence 2 drops
almond essence 2 drops
- first you need to mix the fruits and the other ingredients under the fruit mixture list and keep it in an air tight container for about 10 days.
- On the day you are supposed to make the cake you need to beat the egg whites until it gives stiff soft peeks.
- While beating the egg whites you need to add a half of the sugar.
- Then beat the butter with the remaining sugar until soft and fluffy
- Gradually add one egg yolk at a time for the butter sugar mixture and beat well until well combined Add semolina to the butter mixture and mix well.
- Finally add the egg white to the yolk , semolina and butter mixture and fold .
you can now bake this batter under 180 Celsius degrees for about hour..
The baking time may differ from oven to oven so make sure you do the tooth pick test before turning off the oven.
There are two ways to complete this caking.
the very first way is,
When the baking is done, you can make the marzipan icing and roll it over the cake and serve or you can cut into equal size pieces
And you can also crumble the baked cake and in a square cake pan you can thin it down pushing thoroughly to 1 inch height or less and then you can roll the marzipan icing on top.
If you feel that the icing is not sticking to the cake you can apply some honey on top of the cake and then add the icing.
